These chewy and creamy no bake peanut butter oatmeal cookies are the ultimate quick no-bake recipe for families! Made with pantry staples and no oven needed, they’re fun to make, ready in 30 minutes, and perfect for playdates or after-school snacks. If you’ve ever wondered how to make no-bake cookies that are simple and wholesome — this is it!

Ingredients

  • 3 cups white sugar
  • ¾ cup butter
  • ¾ cup milk
  • 1 ½ cups peanut butter
  • ½ teaspoon vanilla extract
  • 4 ½ cups quick-cooking oats

Optional add-ins / substitutions:

  • No butter ? Swap with ½ cup coconut oil for a lighter twist (plus a hint of tropical fun).
  • Lower-sugar option : Use 1¼ cups sugar + ¼ cup honey or maple syrup.
  • Nut-free households : Try sunflower seed butter — the flavor is slightly toasted and totally delicious.

Instructions

  • Melt & mix : In a medium saucepan over medium heat, combine butter, sugar, and milk. Bring to a gentle boil for exactly one minute, stirring constantly.
  • Add peanut butter : Remove from heat and stir in peanut butter and vanilla until smooth and glossy
  • Oats party : Pour in the oats and mix until every flake is coated in creamy peanut-buttery goodness.
  • Scoop & shape : Using a cookie scoop or tablespoon, drop mounds onto parchment paper.
  • Set & chill : Let the cookies sit at room temp for 20 minutes or pop them into the fridge for 10 minutes if your little ones can’t wait (mine never can !)
  • Enjoy : Share with your happy little eaters while they’re soft and chewy. Yum yum !
